You’ll also need some tools for this recipe. A soup pot, knife, cutting board, wooden spoon, and basic measuring tools should do it.

Change It Up As Desired
You can make this soup creamier with a splash of heavy cream OR evaporated milk, be sure to add this after the soup is done cooking so it doesn’t curdle. Just stir it in and serve.
Use spicy Italian sausage for more heat. Or choose some other kind of bulk sausage such as homemade or store brand.
Add in extra vegetables if you want to bulk it up. And change up the spinach for frozen spinach, chopped fresh kale, or even swiss chard.

Storing and Using Leftovers
Store leftovers in an airtight container in the refrigerator for 2–3 days. The tortellini will soak up the broth and get extra soft but that’s a plus in my book.
If the tortellini absorbs too much broth while in storage, add a little extra when reheating to bring the soup back to the right consistency. You can also just add a little splash of water!

Tortellini Soup
Ingredients
- 1 tbsp vegetable oil
- 1 lb ground Italian sausage
- 2 large carrots peeled and sliced
- 2 stalks celery sliced
- 1 onion diced
- 2 cloves garlic minced
- 2 cups butternut squash cubed
- 1 can (14 oz) diced tomatoes do not drain
- 6 cups chicken broth
- 1 tbsp thyme
- 1 tbsp oregano
- 1 tbsp pepper
- 1 pack (9 oz) tortellini
- 1 1/2 cups spinach
- 1/4 grated parmesan optional
Instructions
- Heat the oil in a large pot over medium high heat and add the sausage cooking until browned about 5 to 7 minutes
- Add the carrots celery onion garlic and butternut squash and sauté for 3 to 5 minutes until slightly softened

- Add the chicken broth diced tomatoes with juice thyme oregano and pepper and stir to combine

- Bring the soup to a boil then reduce heat and simmer for 10 minutes
- Add the tortellini and cook for about 6 minutes

- Turn off the heat add the spinach and stir until wilted
- Sprinkle with parmesan before serving
- Ladle into bowls and serve
