Tortellini Soup

Tortellini Soup is a bowl of soup that feels right on chilly nights when you want something warm and filling. It brings together sausage, vegetables, and tender tortellini in a way that tastes hearty without taking all evening to make. If you love simple recipes that still feel seasonal and special, this one belongs on your fall lineup.

This easy pasta soup tastes savory and rich with tender tortellini and hearty sausage. It’s also full of butternut squash and spinach so it’s better for you than a lot of soups.

Tortellini Soup is a great choice for weeknights when you want a full meal without a lot of prep or work in the kitchen. It uses basic ingredients that are easy to find and builds flavor quickly. It’s also a nice option for using seasonal produce like butternut squash while keeping dinner simple.

Change It Up As Desired

You can make this soup creamier with a splash of heavy cream OR evaporated milk, be sure to add this after the soup is done cooking so it doesn’t curdle. Just stir it in and serve.

Use spicy Italian sausage for more heat. Or choose some other kind of bulk sausage such as homemade or store brand.

Add in extra vegetables if you want to bulk it up. And change up the spinach for frozen spinach, chopped fresh kale, or even swiss chard.

Storing and Using Leftovers

Store leftovers in an airtight container in the refrigerator for 2–3 days. The tortellini will soak up the broth and get extra soft but that’s a plus in my book.

If the tortellini absorbs too much broth while in storage, add a little extra when reheating to bring the soup back to the right consistency. You can also just add a little splash of water!
