Sheet Pan Sausage and Vegetables

Sheet Pan Sausage and Vegetables makes stretching your food dollars easy without feeling like you’re cutting corners. It uses affordable ingredients most of have in our pantry, whether that’sa chilled, frozen or dry pantry. Prep is quick too, just slice, season, and bake. Substitutions

Any sausage will work for this recipe as long as it’s precooked. Think a smoked sausage, rope sausage, a local sausage, all of them work. You can also sub in leftover brats if you have happen to have them on hand.

For the bell peppers any color will work just fine here, they do not have to be red or yellow. As well as the potatoes can be any size, the baby size work well here because they are easy to prep.

Got Leftovers?

Leftovers reheat beautifully for lunches. Warm them before sending them in a thermos style lunch cup. OR pack them in a microwavable bowl that can be reheated at work or school.

Remake the leftovers into wraps if your family doesn’t do leftovers. Or simply reheat and serve them over rice.

Meal Prep

This is a great recipe to make for meal prepping. Make as directed but let it cool instead of serving it. Then divide it into meal sized servings and store in the fridge until ready to use. Up to 3 days.

Ingredients

  • 14 oz kielbasa
  • 2 cups broccoli florets
  • 1 red bell pepper cut into 2-inch pieces
  • 1 yellow bell pepper cut into 2-inch pieces
  • 1 lb baby potatoes halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp freshly shredded Parmesan
  • 1 tbsp chopped fresh parsley for garnish

Instructions

  • Preheat the oven to 400°F and line a large baking sheet with parchment paper
  • Cut the veggies and kielbasa into bite-sized pieces
    Red bell peppers added to the sausage and potatoes.
  • In a large bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and pepper

  • Add the veggies and kielbasa to the bowl and toss to coat evenly

  • Spread everything in a single layer on the prepared baking sheet

  • Bake for 15 minutes, then toss and bake for another 10 to 15 minutes until the potatoes and veggies are tender

  • Remove from the oven and sprinkle with shredded Parmesan and chopped parsley before serving
