Ingredients

  • 14 oz kielbasa
  • 2 cups broccoli florets
  • 1 red bell pepper cut into 2-inch pieces
  • 1 yellow bell pepper cut into 2-inch pieces
  • 1 lb baby potatoes halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp freshly shredded Parmesan
  • 1 tbsp chopped fresh parsley for garnish

Instructions

  • Preheat the oven to 400°F and line a large baking sheet with parchment paper
  • Cut the veggies and kielbasa into bite-sized pieces
    Red bell peppers added to the sausage and potatoes.
  • In a large bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and pepper

  • Add the veggies and kielbasa to the bowl and toss to coat evenly

  • Spread everything in a single layer on the prepared baking sheet

  • Bake for 15 minutes, then toss and bake for another 10 to 15 minutes until the potatoes and veggies are tender

  • Remove from the oven and sprinkle with shredded Parmesan and chopped parsley before serving
