- 14 oz kielbasa
- 2 cups broccoli florets
- 1 red bell pepper cut into 2-inch pieces
- 1 yellow bell pepper cut into 2-inch pieces
- 1 lb baby potatoes halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp freshly shredded Parmesan
- 1 tbsp chopped fresh parsley for garnish
Preheat the oven to 400°F and line a large baking sheet with parchment paper
Cut the veggies and kielbasa into bite-sized pieces
In a large bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and pepper
Add the veggies and kielbasa to the bowl and toss to coat evenly
Spread everything in a single layer on the prepared baking sheet
Bake for 15 minutes, then toss and bake for another 10 to 15 minutes until the potatoes and veggies are tender
Remove from the oven and sprinkle with shredded Parmesan and chopped parsley before serving
