We had leftover corn muffins the other night, and I was musing on how to serve them, what to do with them. My husband said why not make cornmeal mush? And I immediately shot him down and said no, that’s something else, different.
A heated conversation ensued. It ended in him calling his mom and confirming that what he was thinking of was cornbread cereal not cornmeal mush. He said he loved it as a kid and so we had to make it. And you know what? It was delicious!

My Mother-in-law says she actually prefers her cornbread cereal made with buttermilk and topped with salt and pepper. However you make it, this is a simple, budget-friendly recipe that makes the most of every crumb.
Reheat the muffins and splash cold milk over the top. It’s not much of a change, but it’s warm and filling.

- 1 cornmeal muffin or piece of cornbread
- 1 tbsp honey
- 1/2 cup milk
Instructions
- Crumble the cornbread into a bowl

- Drizzle honey over the top

- Pour the milk over the crumbled cornbread

- Grab a spoon and enjoy this simple, cozy treat!
