Cranberry Brie Bites

The holidays are the perfect time for recipes that bring elegance and taste together, and these Brie and Cranberry Bites do just that. Simple bite-sized appetizers that really hit the spot.

Creamy, melty brie pairs beautifully with sweet-tart cranberry sauce infused with orange and cinnamon, all nestled in buttery crescent dough. They’re quick to make, look impressive, and offer just the right balance of festive flavors.

If you’ve got a potluck coming up these little brie bites are the perfect thing to bake, take, and share. They’re nice because they make a lot but not so much that you’ll have to take home. If it’s a big party, double the batch!

What You Need to Make Brie Bites

Add these items to your shopping list to know you have them when needed. The refrigerator items will be good in the fridge for quite a while, which means you can shop the sales, tuck the ingredients away and have these anytime you need them. No running to the store is required.

If you happen to have puff pastry in the freezer that you need to use up, by all means, use it! They’ll be a bit puffier and crispier.

This Recipe Is A Two-fer

The cranberry sauce needed for these brie bites makes so much more than you need. You can make the sauce, use what you need, and then save the remaining cranberry sauce to serve with dinner later. It is delicious and tastes great with any meat dish you make for the holidays.

And if you’re not going to have a feast right away no worries. You can freeze the extra cranberry sauce until you can use it. OR make a second batch of the appetizers later on, and you’ll only have to buy crescent dough.

If you HAPPEN to have cranberry jelly that you’ve canned you can use that in this recipe. In Alaska we have highbush cranberries and they make our favorite jelly. It would work perfectly in these, or currant jelly if you have it.

These Don’t Make Great Leftovers

If you have leftovers, they’ll be ok, but they’re not fabulous. You can reheat them, and they’ll be a bit better.

Equipment

  • 24 ct mini muffin tin

Ingredients

  • 14 oz cranberry sauce use whole berry or sauce
  • ¼ cup orange juice
  • 1 Tbsp fresh orange zest
  • ¼ cup sugar
  • ¼ tsp cinnamon
  • 8 oz crescent dough 1 tube
  • 4 oz Brie
  • 1 Tbsp fresh thyme

Instructions

  • Preheat the oven to 375 F°
  • Grease a 24 count mini muffin pan with cooking spray and set aside
  • In a small saucepan over medium heat add the cranberry sauce, orange juice, zest, sugar and cinnamon
  • Bring to a boil then reduce to a simmer for 5 minutes or until the sauce has thickened
  • Meanwhile roll out the crescent dough onto a piece of parchment paper or floured surface and cut the dough into 24 even pieces.
  • Place each piece into a muffin tin
  • Cut the brie into 24 pieces and lay one in each tin
  • Top the brie with 1 tsp of the cranberry sauce
  • Put a pinch of fresh thyme on each bite
  • Bake for 10 minutes.
  • Serve immediately and enjoy!
