These Cake Mix Chocolate Chip Cookie Bars are a quick, fun way to make dessert without much fuss. Easy to make and fun to bake with kids, they’re a perfect go-to when you need a fast sweet treat.

Bars are a great alternative to cookies because there’s no scooping or shaping—just press into the pan and bake. These are soft, chewy, and packed with classic chocolate chip cookie flavors. They bake up golden with a melt-in-your-mouth texture.

What You Need To Make These Cookie Bars

It’s always smart to check your pantry and pick up everything in advance so you’re ready to bake without last-minute store runs. Once you’ve got what you need, the rest is quick and easy and you can make them whenever you want to!

BUT because these cookies don’t need a lot of ingredients, fortuitously, you might just have everything you need with no preplanning.

  • 1 box yellow cake mix
  • melted butter

  • semi-sweet chocolate chips

How To Change These Up

You can use ANY cake mix you happen to have on hand. I always seem to find a weird random cake mix in my pantry. Typically I’ve bought it for some other reason and then didn’t use it.

A chocolate cake mix makes for an extra-rich version of cookie bars. This simple change transforms simple chocolate chip cookies into over-the-top chocolate cookie bars.

Got Leftovers??

Keep leftover bars in an airtight container at room temperature for 3–4 days. You can also freeze them if you need to. Lay in a freezer bag or a freezer container with layers of parchment between them. Freeze for up to six months.

Ingredients

  • 1 box (15.25 oz) yellow cake mix
  • 5 tbsp butter melted
  • 2 large eggs
  • 12 oz semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F (175°C)
  • Lightly grease a 9×13-inch baking pan with non-stick spray and set aside
  • In a large mixing bowl, combine cake mix, melted butter, and eggs

  • Mix until a soft dough forms
  • Fold in the chocolate chips until evenly distributed

  • Spread the batter evenly in the prepared baking pan

  • Bake for 20–25 minutes, or until set and lightly golden
  • Cool in the pan for 10 minutes, then cut into bars

  • Any yellow or white cake mix will work
