Easy Oven Roasted Chicken
Whether you’re grabbing them on sale at the store or growing them yourself, everyone loves an easy Oven-Roasted Chicken. They’re juicy and tender and make for great leftovers! And if you’re looking for a dinner that smells amazing and brings everyone to the table, then a roast chicken is the way to go.

What You Need For Roasting A Chicken
Once you’ve got the chicken everything else is probably things you’ve got on hand. Or can be easily be obtained.
- a whole chicken about 4-6 pounds
- onion
- lemon-you can use an orange as well, this just gives the chicken a citrus lift
- olive oil
- salt
- paprika
- pepper

What To Serve With Roast Chicken
All the essentials! Or none of the essentials. Your choice!
You can roast this chicken and serve it with just about anything you want. Cauliflower cheese is a family favorite anytime we make a roasted bird for dinner. But you can serve it with salad, veggies, biscuits, literally any thing you can think of. Or that fits your budget.

Juicy Roasted Chicken
Equipment
- 1 Roasting Pan or 9×13 pan
Ingredients
- 1 whole chicken 5-6 lbs
- 1 onion peeled and cut into pieces
- 1 lemon cut into pieces
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp granulated garlic
- 1/2 tsp coriander
- 1/2 tsp paprika
- fresh thyme or rosemary optional
Instructions
- Preheat the oven to 350F°
- Combine olive oil, salt and spices in a bowl
- Coat the chicken all over and inside
- Place lemon and onion pieces inside the chicken

- Tie the legs together with kitchen string if desired, not neccesary
- If using, add thyme and rosemary to the baking dish

- Cover the baking dish with foil and place in the oven
- Bake the chicken covered with foil for about 1-1.5 hours, baste with chicken juices every 30 minutes or so
- Remove the foil and continue to bake the chicken for another 20-30 minutes to create a golden crust, see notes below
- The chicken is done cooking when the internal temp reaches 165° in the thickest part of the chicken, typically you take the temperature between the thigh and the body
- Remove the chicken from the oven, let it rest 10 minutes and carve
