Cheeseburger Soup
Ingredients
- 1 lb ground beef
- 1/2 yellow onion chopped
- 1 cup carrots shredded
- 3 tbsp butter
- 1/4 cup all purpose flour
- 2 cloves garlic minced
- 4 cups chicken broth
- 2 cups milk
- 4 russet potatoes peeled and chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp basil
- 1 tsp parsley
- 4 oz cream cheese
- 2 cups cheddar cheese shredded
Instructions
- Add the ground beef to a pot and cook breaking it up until browned

- Drain the grease and remove the beef from the pot then set aside
- Add the butter to the pot and heat until melted
- Add the onion and shredded carrots and cook over medium high heat until softened

- Add the garlic and flour and stir to combine cooking for 1 to 2 minutes
- Pour in the chicken broth and milk and stir well

- Add the salt pepper basil parsley and chopped potatoes
- Bring to a boil then reduce heat and simmer for 12 to 15 minutes until potatoes are fork tender

- Reduce heat to low or turn it off completely
- Add the cream cheese and shredded cheddar and stir until fully melted
- Add the cooked ground beef back to the pot and stir to combine

- Serve warm with your favorite toppings
