A creamy comforting soup that tastes just like a classic cheeseburger loaded with beef potatoes and melted cheese.

- 1 lb ground beef
- 1/2 yellow onion chopped
- 1 cup carrots shredded
- 3 tbsp butter
- 1/4 cup all purpose flour
- 2 cloves garlic minced
- 4 cups chicken broth
- 2 cups milk
- 4 russet potatoes peeled and chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp basil
- 1 tsp parsley
- 4 oz cream cheese
- 2 cups cheddar cheese shredded
Add the ground beef to a pot and cook breaking it up until browned
Drain the grease and remove the beef from the pot then set aside
Add the butter to the pot and heat until melted
Add the onion and shredded carrots and cook over medium high heat until softened
Add the garlic and flour and stir to combine cooking for 1 to 2 minutes
Pour in the chicken broth and milk and stir well
Add the salt pepper basil parsley and chopped potatoes
Bring to a boil then reduce heat and simmer for 12 to 15 minutes until potatoes are fork tender
Reduce heat to low or turn it off completely
Add the cream cheese and shredded cheddar and stir until fully melted
Add the cooked ground beef back to the pot and stir to combine
Serve warm with your favorite toppings
