Ingredients

  • 1 tsp extra virgin olive oil
  • 2 cloves garlic minced
  • ¾ cup yellow onion diced
  • 4 cups potatoes peeled and diced
  • 4 cups chicken stock
  • 1 lb spicy Italian sausage
  • 1 ½ cups corn fresh or canned, drained
  • 1 cup heavy cream
  • 3–5 sprigs fresh thyme plus more for garnish (optional)

Instructions

  • Heat olive oil in a Dutch oven over medium heat
  • Add onion and garlic and cook until translucent

  • Pour in chicken stock, potatoes, and thyme and bring to a boil over medium-high heat

  • Reduce heat to medium and simmer for 10–15 minutes, until potatoes are fork tender
  • In a skillet, cook Italian sausage, breaking it up as it browns
  • Drain excess fat and add sausage to the Dutch oven

  • Remove thyme sprigs before serving

Notes
