Peanut Butter Banana Cookies

One ripe banana and peanut butter come together to make soft cookies that are simple and hard to stop eating.

- 1/2 cup unsalted butter softened
- 3/4 cup light brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 1 1/3 cups all-purpose flour
- Pinch salt
- 3/4 tsp baking soda
- 1/4 cup banana mashed
- 1/3 cup sugar for rolling
Preheat the oven to 350°F
Line baking sheets with parchment paper
In a mixing bowl beat the butter and brown sugar together for about 2 minutes
Add peanut butter egg vanilla salt baking soda and mashed banana
Mix for 1 to 2 minutes until well combined
Gradually add the flour and mix just until combined
Do not overmix
Scoop the dough using a cookie scoop
Roll each dough ball in sugar
Place on the prepared baking sheet
Flatten each cookie slightly with a fork
Bake for 10 to 12 minutes until lightly golden
Remove from the oven and let rest for 3 to 4 minutes before serving
- Use a ripe banana for better flavor and texture
- Cookies will continue to set as they cool
