Ingredients

  • 1 lb boneless skinless chicken breast chopped into 1-inch pieces
  • 1 lb andouille sausage sliced into 1-inch pieces
  • 1/2 large yellow onion chopped
  • 1 cup celery chopped
  • 1 cup chicken broth
  • 1 tbsp oregano
  • 2 bay leaves
  • 3 cloves garlic minced
  • 2 tbsp Cajun seasoning I used Slap Ya Mama
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1–2 tsp cayenne pepper
  • 2 (14 oz) cans petite diced tomatoes with juice
  • 1 lb medium shrimp peeled and deveined, thawed

Instructions

  • Add the chicken and sausage to the crockpot

  • Add the onion and celery
  • Pour in the chicken broth
  • Add the oregano, bay leaves, garlic, Cajun seasoning, salt, pepper, and cayenne

  • Pour the diced tomatoes and their juice over the top

  • Give everything a gentle stir to combine

  • Cook on low for 6–7 hours or on high for 4–5 hours
  • Add the thawed shrimp during the last 30 minutes of cook time
  • Stir gently and allow the shrimp to cook through

Cook time is 4–5 hours on high or 6–7 hours on low.
