Ingredients

  • 15.25 oz box white cake mix
  • ¾ cup water
  • ½ cup sour cream
  • cup vegetable oil
  • 1 tsp almond extract
  • 4 egg whites
  • 1 cup mini semi-sweet chocolate chips plus more for topping
  • 1 cup chopped maraschino cherries drained and rinsed
  • 3.4 oz box instant vanilla pudding mix
  • 2 cups cold milk
  • 2 tbsp maraschino cherry juice
  • 8 oz whipped topping
  • Whole cherries for garnish

Instructions

  • Preheat oven to 350°F (175°C)
  • Grease a 9x13 in baking dish
  • In a small bowl, toss chocolate chips with 1 tbsp of dry cake mix to prevent sinking
  • In a large bowl, beat cake mix, water, sour cream, oil, almond extract, and egg whites until just combined

  • Stir in chopped cherries and chocolate chips
  • Pour batter into the prepared baking dish

  • Bake for 35 min or until a toothpick inserted in the center comes out clean
  • Remove from oven and let cool completely

  • Use the end of a wooden spoon or smoothie straw to poke holes all over the cake
  • In a bowl, whisk together pudding mix, milk, and cherry juice until smooth
  • Pour pudding mixture evenly into the holes and over the surface of the cake

  • Spread whipped topping evenly over the cake

Notes

  • Store covered in the fridge for up to 3 days
  • Substitute French vanilla or cherry cake mix for added flavor
  • Regular chocolate chips work if mini aren't available
