Ingredients

  • 4 boneless pork chops
  • 3 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp chopped fresh thyme
  • 1 medium onion peeled and cut into 8 wedges
  • 2 medium apples peeled, cored, and cut into 8 wedges
  • 4 oz sliced bacon cut into bite-size pieces
  • fresh parsley for garnish

Instructions

  • Preheat oven to 425°F
  • Season pork chops with salt and pepper

  • Heat 2 tablespoons of olive oil in a large cast-iron skillet over high heat
  • Sear pork chops for about 3 minutes per side until browned, then remove from skillet and set aside

  • Season with thyme, salt, and pepper, and toss to coat

  • Remove from oven, place pork chops on top of apples and onions, and return to the oven
