Rustic galettes have everything you love about apple pie but with a simple-to-make freeform shape. Anyone can make a galette, even if the idea of making a pie intimidates them. No complicated steps, no fussy rolling—just layer, fill, fold, and bake.
But then let’s add the easy crumb topping of an apple crumble and you’ve just leveled up your dessert making skills. This 2/1 dessert is so easy to make, you’ll soon be making for every special occasion.

About That Crust
Using a store-bought crust allows you to make a dessert without worrying about the crust. A lot of people worry about making homemade pie crust, but you don’t have to with this recipe.
One problem with galettes is that the crust can crack when folding over the edges and then they leak. When that happens they leak all their juice out and become dry.
If you’re not careful, the juice will burn. Yuck, the stench of burning sugar is a smell you won’t soon forget.

Because we’re using two full pie crusts, I’m 99% sure this apple galette won’t leak. It’s nice and thick to keep the juices IN without being overwhelming, thick, or gummy.
Apples All Year Long
Apples are one of the best fruits to bake with because they’re available all year long. Whether it’s peak fall season or the middle of summer, you can always count on fresh apples for desserts.
There are some apples that are better for baking than others, read my guide about the best apples for baking for all the details. BUT rest assured, we’re using classic Granny Smiths for this recipe. They’re one of the BEST apples to bake with.

What You Need to Make This Recipe

- pie crust (2 premade crusts are perfect here)
- Granny Smith apples
- sugar (No sugar? These alternatives will sweeten the deal)
- cinnamon
- flour
- butter
- brown sugar
- lemon juice
- vanilla extract
- egg (for egg wash)

How to Change It Up
Swap out the apples for pears for lovely pear galette. Or mix in some berries for a fresh twist. Raspberries, blueberries and blackberries would be perfect mixed into the filling.
You can add some chopped nuts to the crumb topping for extra texture. Pecans or walnuts work well with apples, but even almonds would work.
We’ve served it with a dollop of whipped cream and a drizzle of caramel over the top for the photos here. But you can serve it plain or drizzled with heavy cream for an old fashioned twist.

How to Store Leftovers
Leftovers can be stored at room temperature for a day or two, covered loosely with foil. For longer storage, keep it in the fridge for up to five days. Reheat in the oven to crisp up the crust before serving again, if desired.

Apple Crumb Galette
Ingredients
For the crust & filling:
- 2 refrigerated pie crusts at room temperature
- 4 large Granny Smith apples cored, peeled, and sliced ¼ inch thick
- ⅔ cup granulated sugar
- 3 tbsp all-purpose flour
- 1 tsp ground cinnamon
For the topping:
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup (½ stick) butter softened
- ½ tsp ground cinnamon
Optional toppings:
- Caramel sauce
- Ice cream or whipped cream
Instructions
- Preheat the oven to 350°F (175°C)
- Line a large baking sheet with parchment paper and set aside
- Press the two pie crusts together to form a ball on a clean surface

- Roll the dough into a 12-inch circle and transfer it to the prepared baking sheet
- Toss the apple slices with granulated sugar, 3 tbsp flour, and 1 tsp cinnamon in a large bowl

- Spread the apple mixture evenly onto the center of the pie dough, leaving a 2-inch border

- Fold the edges of the crust up over the apples, working your way around the circle

- Slide the galette onto a rimmed baking sheet
- In a small bowl, mix the topping ingredients with a fork until crumbly

- Sprinkle the topping evenly over the apples in the center

- Bake for 40-50 minutes, until the apples are tender and the crust is golden brown

- Remove from the oven and cool for at least 10 minutes before serving
- Drizzle with caramel sauce and serve with ice cream or whipped cream if desired
