Ingredients

Blondies

  • 1 cup apple cider
  • 1 stick butter ½ c, cut into chunks
  • ½ cup light brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tsp apple pie spice
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • pinch of salt
  • ½ cup quick oats
  • 1 cup flour

Topping

  • 1 tbsp melted butter
  • 2 tbsp sugar
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 350°F (175°C) and line an 8×8 baking dish with parchment paper
  • Bring apple cider to a boil over medium heat, then reduce heat and simmer until reduced to ½ cup, about 15 minutes
  • Add butter chunks to the hot cider and let melt, then cool mixture for 5 minutes
