Blondies
- 1 cup apple cider
- 1 stick butter ½ c, cut into chunks
- ½ cup light brown sugar
- 1 egg
- 2 tsp vanilla extract
- 1 tsp apple pie spice
- 1 tsp cinnamon
- ½ tsp baking powder
- pinch of salt
- ½ cup quick oats
- 1 cup flour
Topping
- 1 tbsp melted butter
- 2 tbsp sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 baking dish with parchment paper
- Bring apple cider to a boil over medium heat, then reduce heat and simmer until reduced to ½ cup, about 15 minutes
- Add butter chunks to the hot cider and let melt, then cool mixture for 5 minutes

- Whisk in brown sugar until combined

- Add egg and whisk until smooth

- Stir in vanilla, apple pie spice, cinnamon, baking powder, and salt

- Mix in oats and flour until blended

- Pour batter into prepared pan and bake for 25–30 minutes

- Cool for 10 minutes before topping

- In a small bowl, mix sugar and cinnamon
- Brush blondies with melted butter, then sprinkle with cinnamon-sugar mixture

- Let cool completely before cutting into 16 squares
